Oaty Banana Pancakes
that are packed with oaty goodness and high quality protein making them the
perfect start to the day.
Makes around 10 small
130g rolled oats
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
80-100 ml milk of your
choice, I use almond milk
2 eggs, separated
Coconut oil or olive oil
Place the oats and cinnamon
in a blender and blend until like a fine sand. Add the banana, egg yolks and milk and blend again.
Whizz the egg whites in
another bowl until stiff and then gently stir into the oat mixture.
Heat a pan with the oil of
your choice and then place spoonfuls of the mixture in the pan - cook for
around 1 minute on each side.
Serve with mixed berries,
maple syrup, fruit coulis, greek yoghurt or all the above.
grated pear or apple instead of mashed banana.
up triple quantities of the oats and keep in a jar to use another time or
for any other baking.
alternative wholewheat flour or buckwheat flour that is high in magnesium
- known as ‘nature’s relaxant’
can also add some ground flaxseeds to the oats to add more omega 3 fats.
