Oaty Banana Pancakes
American-style pancakes that are packed with oaty goodness and high quality protein making them the perfect start to the day.
Makes around 10 small pancakes:
130g rolled oats
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
1 banana
80-100 ml milk of your choice, I use almond milk
2 eggs, separated
Coconut oil or olive oil for cooking
Place the oats and cinnamon in a blender and blend until like a fine sand. Add the banana, egg yolks and milk and blend again.
Whizz the egg whites in another bowl until stiff and then gently stir into the oat mixture.
Heat a pan with the oil of your choice and then place spoonfuls of the mixture in the pan - cook for around 1 minute on each side.
Serve with mixed berries, maple syrup, fruit coulis, greek yoghurt or all the above.
